King Salmon crudo with orange gremolata and rocket
SERVES 2
INGREDIENTS
1 (120g) King Salmon fillet (skinless)
3 tbsp orange Gremolata (Recipe below)
1 tbsp Extra Virgin Olive Oil
1 tsp sea salt
A handful of rocket
METHOD
Thinly slice King Salmon
Place in a mixing bowl with orange Gremolata and evenly mix and incorporate
Arrange Neatly on plate, and spoon any leftover gremolata onto plate
Garnish with Rocket
Season with Sea Salt flakes
ORANGE GREMOLATA
1 bunch mint
1 bunch coriander
½ bunch flat leaf parsley
½ minced garlic clove
Zest and juice of ½ orange
¾ Extra Virgin Olive Oil
1 tsp sea salt
1 tsp icing sugar
In a mixing bowl place, olive oil, orange zest and juice, garlic, sea salt and icing sugar and mix until evenly incorporated - taste and adjust seasoning if required (salt, sugar, acidity)
Pick and wash all herbs, then finely chop and add to olive oil mix and evenly incorporate
Reserve for later use
