Peppercorn crusted tuna with zucchini and sesame ponzu dressing

Peppercorn crusted tuna with zucchini and sesame ponzu dressing
 

INGREDIENTS

  • 300g tuna steak

  • 1 tbsp Sake

  • 1 tbsp mirin 

  • 1 tbsp soy 

  • 1 tsp lemon juice

  • 1 tbsp black peppercorn (mill) 

  • 1 tsp sesame seeds

  • 1 spring onion 

  • 2 tbsp sliced green zucchini

  • 2 tbsp sliced yellow zucchini 

    PONZU DRESSING

  • 3 tbsp light soy 

  • 2 tbsp mirin 

  • 1 tbsp water 

  • 2 tsp yuzu juice 

 

METHOD

  1. Place all ingredients in a mixing bowl and mix to evenly incorporate

  2. First make prepare your marinade by mixing together sake, mirin, soy and lemon juice

  3. Marinate tuna overnight, remove from marinade and dry

  4. Evenly coat in crushed peppercorns

  5. Heat a nonstick fry pan over high heat, quickly sear tuna on all sides

  6. Slice and serve on plate as per demonstration

  7. Cover with prepared ponzu sauce

  8. Garnish with spring onion, zucchini and sesame
