Freshly shucked oysters, Thai green chili dressing

INGREDIENTS
10 live oysters (unshucked)
100g Thai green chili dressing
THAI GREEN CHILI DRESSING
1 banana shallot (peeled & thinly sliced into half moons)
2 spring onions (green part only finely chopped)
4 tbsp fish sauce
3 tbsp palm sugar
5 tbsp lime juice (freshly squeezed)
2 long green chili (seeds removed & thinly sliced into half moons)
METHOD
Add shallot, spring onion and green chili to mortar and pestle and grind into a paste
Add palm sugar and grind into a paste
Finally add fish sauce and lime juice and mix to evenly incorporate
Taste and adjust seasoning (sweet, sour, salty)
Serve chilled
